I think 3-2 (if there's a huge gulf between the opponent's OS and IS and you think you can lock down the boards and stop the other team from getting a ton of offensive rebounds) or man to man are the most useful against run and gun. But it really depends on your personnel. I have decent rebounding and defending big men and all my guards have very good OD so I could generally lock down outside based teams in my division this year using man to man.
In terms of offense against FCP, I was successful using a slower paced offense against good teams throwing FCP at me, but my experience with it was limited enough that I wouldn't draw any general conclusions from it.
