Definitely play a zone.
It depends a little on the quality of your rebounding, but if it's good enough, I'd even go with 1-3-1. Motion means he'll take more outside shots, so dominating on the outside defense is more important than leaking about 10 shots on the inside. On the other hand, he'll get less passes through to his uys inside with 1-3-1.
So there are two requirements for 1-3-1 I don't know about and that will affect your decision.
1) your rebounding vs. his rebounding. You want to be at least even there, particularly with 1-3-1, as the only thing you cannot afford to happen is defending his 3pointers well only to have his Big Men get easy dunks.
2) His Ball Movement vs. your Outside offense. If his ball movement is bad (below respectable), 1-3-1 will close down the passing lanes better, forcing bad shots from the outside. If he can pass or cut through your defense at will, 1-3-1 will be a bad choice however.
So if he's bad at moving the ball around and rebounding, 1-3-1 might be your best choice. If either of these conditions is not fulfilled, though, I'd go with 3-2, which is safer in those regards while still giving some protection against his 3s.
