It's the difference between the points the given player's team scored and the points they conceded while he was in the game.

E.g. Player X has a +/- of +12. It means that while he was on the floor his team outscored the other by 12 points

It tells you the points differential while a player is in the game. For example if a player is +20 that means your team outscored the opposition by 20 while he was in the game.
