Honestly there isn't really a best time. I would just put them up for sale as soon as you can.

IF you want to note the best time. Takes a study. Login at different times during a 2 weeks period. Document how many people are online. Take the data and figure out the best time to for the player to sell, then count backwards 3 days. That is the best time.
If your going to sell an 18yo, you've been training, the closer to the end of season, the more value he will have.

1/2pm EST on game days might be ideal in terms of users online. The question is though whether that automatically means more users browsing the market. A lot of them will probably only follow the games.
You don't necessarily need to hit peak hours though. If you have a fixed price, you could care less how many users are on if only one does bid on your player. It's another thing if you actually want to hold an auction starting at a lower price.

There's a tool on the USA-Offsite, so no study is necessary The most users are online on Tuesday at ~8 an on Saturday at ~6. Interpret that how you will. I also recommend joining the offsite so you can have access to other helpful tools like this.
