What you are ignoring is that faster builds don't create higher skilled players, but more top level players. The idea is rather than spending 10+ seasons training 3 players and topping up the rest of your roster from the transfer market, you can train 6 world class players by investing the money in coaches instead of overpaying in a scarce market.
Not only will there be more variety for people who prefer to buy players, but people prefer to train can have more of the precise builds in more positions. It's a win for both sides of the equation.
