So I am going to train one-on-one this week, but I was wondering if I should try doing some team training to get pops in a couple of other players that I am not targeting this season. If I do team one-on-one can I expect to see pops every week from at least one player? Or does it inhibit training so much that the pops wont come?

I belive you will see pops in at least one, since there are some secondary skills as well, but overall it is waaaay much slower training. If you have a lot of semi young ones, I would say okay, but if you have some young ones you will over time lose their strength in extra training speed and end up with mediocre players. IMHO, I think it is better to use some players in non-training positions, train 4-5 players in 2 positions(ex:PG/SG). After a while you sell 2-3 of these players and the ones you used in the non-training positions and buy older, but decent players for non-training positions(these are cheaper than young ones) and draft or buy a couple new trainees. Thereby reinforcing your team, if however you have a better team than the rest of your league and almost good enough for 1 division higher, you should invest more money in Arena... From the top of my head...
