I don't think minutes is relevant, the useful part of the box score i think are FT, TO and fouls. You want to avoid players who look foul prone and a player with 7 TO doesn't sound too appealing.

If I've got couple scouted players and many unknown, is it worth to take a 'blind' shot and try to get players with bigger numbers?

No. Absolutely not. The only time I take "blind shots" is when the scouted players are completely useless, and when I have a 5 ball player without any further scouting, because at the very least, I know he'll have good initial skills.
