I think it's a good point now that we can assign players to defend different positions. In some plays you see "player X goes up for a layup, guarded closely by player Y", so at the end it's probably not too hard to show how many times each player was defended by each opponent. But I think it's trickier when it comes to zone defenses, because a player attacks the zone and isn't defended directly by an opponent

True. I'm thinking this is more in regards to pulling data out via BBAPI.

Basically I want to know how many shots that person defended and how many went in.

Sorry for my ignorance, but what does BBAPI stand for? I agree it could be interesting. In the same way that you look at shooting percentages to see how good a player is when attacking, this stat your proposing can give us an idea of how good they stand defensively. As individual stats, collectively we have game ratings
