The total statistics and average statistics only count league games. The averages include games where a player was among the 12-suited up, but did not play. These games aren't shown for the player though.

I don't understand how the total ratings and average ratings are calculated.

Well, what does your player do in how much time.
Number of shots , %, rebounds, looses of ball etc..

More he make in few time, better the rating is :)
