Well, our NT played 3 Inside Iso's on this current European Championship - against Israel, Latvija and France. In all of those games, our top scorer (by far) and the player who took the most shots was our PG, who is very good in inside scoring. So I wondered how does these Isos really worked

Based on my experience, Inside Iso usually begins with the inside players, who attempt to play one-on-one. However, if your inside players encounter a very strong inside defense, there is a high probability that they will pass the ball to the outside attackers. Therefore, Inside Iso requires a high level of passing ability from the inside players, and your outside attackers often have many shot attempts.
Lastly, the above is just my personal opinion

Strange, all the opposite happened in my abovementioned matches. Bigs didnt have many passes at all (they arent good at passing) and they didnt take many shots either though they have good IS

Why do I see so many top tier teams who have a few players in their roster who are 50+ years old?

Is it just to have some very cheap players salary wise to fill up the scrimmage spots so not to exhaust the starters?
Seems a bit of an "ugly" way to manage your roster (just my personal opinion).

But would love to know if there's another explanation

There are a few possible explanations to this:
1. Club/National Team legends and once great players (for instance, this manager (56221) is collecting former Poland NT players). This is also used by some non-Supporter teams who don't have access to Hall of Fame.
2. Scrimmage fodder (just like you said), players who are supposed to fill up scrimmage roster, although most teams just buy random players for 1000 $ on Thursdays to fill up the roster, and then fire them.
3. Teams who set BuzzerBeater all-time records through staged scrimmages/private league games where they use very old players, prime example of this is Milwaukee Lethargy (23424).
4. In exceptionally rare cases, managers who want to quit buy several players to go bankrupt and become bot. An extreme example of this is old Shrewsbury Honeybadgers (23572), check their transfer history ;-).

When should you go "take it easy"? Only against teams you outclassed? What's the penalty if you go "take it easy" and lose? After all star break my enthusiasm tanked to "ready" for some reason and I haven't been able to build it back up.

From my experience, I can also add that you can play TIE a few times at the beginning of the season to load up enthusiasm, even at the cost of 1-2 wins (there doesn't seem to be an extra penalty if you lose with TIE, the fans get mad anyway) in order to prepare for the rest of the season. At enthusiasm 8 (eager) it sort of becomes a self-fueling machine because the team performance improves heavily and you can play TIE more often and still win. If you don't feel comfortable throwing a game or two early in the season, at the least you ought to play TIE in games against bots, especially in cup games, as they can help you load up enthusiasm early in the season.
