I've got 3 or 4 good players who are over 30 with stamina at atrocious or awful. Would it be worth it to team train stamina to get the old guys up a few stamina levels or should I focus on my 2 young Centers to train?

Depends on your goal. If your priority is to win games, I strongly advice training some stamina until they have 4/5 since that greatly improves their performance. It would be at the cost of a couple weeks training for your young guys.

Yes but if the youngsters are low in stamina as well, it may be worth to boost their ST, so that they are not subbed out and miss minutes every week.
