Can US players see the statistics about training speed,age,height etc? If so, is it possible to share these findings in a way(idk)? When I was playing two years ago, this project helped me a lot and I would want to use them again. :(

Can't see anything but the data is used both in the training simulator and coach parrot. I look at the training simulator coefficient sheet all the time.

You don't have to actually use the simulator, one of the sheets has all of the data used for the calculation. It has some limitation but you can get a good idea from it.
