Offensive flow is usually a good indicator on the passing/handling abilities of the team. You can see how the offensive flow of the team is relative to the other teams of the league. Also, look at the amount of turnovers a team commits normally. Likewise, with your logic, you can't really see you how good a team's reb and defensive is either and is only an estimate from the game ratings a team puts up.
I don't think you can make such assumptions as there are too many factors at play in the game engine. I am not a big fan of FCP but I will not say that a team with better rebounding, IS and ID will smash a team that plays FCP. There are other factors like your offense, and other match ups, etc
