Since matching your best defender with the best attacker makes all the sense, while the rest play a man-to-man defense, why would you ever choose man-to-man over a box?

I.e. wouldn't box defenses completely render man-to-man useless?

No, the other 4 form a "box" with 2 players around the basket and two further away - imagine 3-2 zone, but instead of 3-2 it is 2-2 sort of. That's how I interpret this tactic (and I used this tactic A LOT over the past 3-4 seasons).
